Mostachos of oil

INGREDIENTS:

1 liter of oil. "Ajolín". 2.5 kg of flour. 1 kg of sugar. Fried and ground almonds. Chocolate bar.

 

PREPARATION:

In a pot (without oil), the flour is toasted. When it takes on a bit of color, it's toasted, and you can pour it into a large bowl. In the pot with oil, a lemon peel is fried ("smoked"), set aside, and when it cools a bit (almost cold), add the "ajolín." Gradually, pour over the flour the oil, sugar, ground fried almonds, and grated chocolate. Knead everything well. Shape the dough into balls, slightly flattening them to give the traditional shape of mostachos. Place them on parchment paper and bake in the oven at a temperature of 180º for 20-25 minutes. In the past, on Christmas Eve, it was common to see neighbors in the street with a board full of mostachos, arranged in several batches, each with its own paper, on the way to the oven or coming back with the mostachos already baked.
